Polysorbate

Polysorbate sind chemische Verbindungen, die durch Veretherung von Sorbitanfettsäureestern mit Polyethylenglycol entstehen. Sie sind grenzflächenaktiv und werden als Netzmittel oder Öl-in-Wasser-Emulgatoren beispielsweise in Kosmetika, Arzneimitteln, Lebensmitteln, Reinigungs- und Waschmitteln verwendet. Die bekannteste Handelsmarke ist Tween®.

Die verschiedenen Polysorbat-Typen unterscheiden sich in der Fettsäure, der mittleren Zahl der Polyoxyethyleneinheiten im Molekül und dem Grad der Veresterung.Weiterhin wurde einigen Polysorbaten eine Lebensmittelzusatzstoffnummer vergeben.[1] Die zweistellige Zahl der Bezeichnung eines jeden Polysorbates folgt einem gewissen Schema: Die erste Zahl steht für die veresterte Säure: 2= Laurinsäure,4=Palmitinsäure,6=Stearinsäure,8=Ölsäure,12=Isostearinsäure. Die zweite Stelle gibt die Art der Veresterung an:0 für einen Monoester mit 20 Polyoxyethyleneinheiten,1 für einen Monoester mit 4 oder 5 Polyoxyethyleneinheiten und die Zahl 5 steht für einen Triester mit 20 Polyoxyethyleneinheiten.
