Appetithäppchen, neudeutsch auch Appetizer, sind kleine Vorspeisen, die vor dem Essen gereicht werden, um den Appetit zu wecken. Bei einem offiziellen Empfang oder Bankett werden sie auch serviert, um die Wartezeit bis zum Beginn des Essens zu überbrücken. Die Häppchen dürfen auch bei gehobenen Anlässen mit den Fingern gegessen werden. Vor allem in Mittelmeerländern werden Appetithäppchen auch abends in Bars und Kneipen zu alkoholischen Getränken serviert. Eine in Deutschland sehr verbreitete Form sind Canapés. In anderen Ländern gibt es für die Häppchen verschiedene landestypische Begriffe:

Die Trennung zwischen Appetithäppchen und Vorspeise ist nicht immer ganz eindeutig. Verschiedene Mezze sind daher nicht selten Bestandteil eines arabischen Menüs. Auch hat es sich eingebürgert, bei einem italienischen Menü als Vorspeise eine Auswahl verschiedener Antipasti zu reichen, insbesondere in Restaurants, die oft ein umfangreiches Buffet mit Häppchen anbieten.
