Nouvelle Cuisine

Der Begriff Nouvelle Cuisine (franz. neue Küche) wurde wahrscheinlich 1768 im Dictionnaire sentencieux als kritischer Seitenhieb auf die Abkehr von bisherigen bürgerlichen, einfachen Kochgewohnheiten erstmals erwähnt.[1] Heute versteht man unter diesem Begriff eine in den 1970er Jahren in Frankreich entwickelte, wenig opulente Kochkunst, die sich um die Bewahrung des Eigengeschmacks von Nahrungsmitteln bemüht. Der Begriff „Nouvelle Cuisine“ wurde 1972 von den Gastrokritikern André Gayot, Henri Gault und Christian Millau geprägt.

Es handelt sich um eine neue leichte Küche, in der mit wenig Fett, aber vielen frischen Kräutern und Gewürzen unkompliziert gekocht wird. In dieser Küche finden häufig Gemüsepürees und gedünstetes Fleisch Verwendung. Es werden vermehrt Rezepte der regionalen Küche aufgegriffen mit marktfrischen Lebensmitteln der Saison. Besonderer Wert wird auf die Präsentation der Gerichte gelegt, das Anrichten wird zur Kunst verfeinert.

In Deutschland wird häufig der französische Koch Paul Bocuse als Schöpfer und bekanntester Vertreter der Nouvelle Cuisine genannt. In Wirklichkeit ist sie aber auf die Einflüsse Michel Guérards und Fernand Points zurückzuführen.
