Ochratoxine sind eine Gruppe von Mykotoxinen (Pilzgifte) verschiedener, in der Natur weit verbreiteter Schimmelpilz-Arten (z. B. einiger Aspergillus- und Penicillium-Arten wie A. ochraceus oder P. verrucosum). Ochratoxin A (OTA) ist das häufigste und wichtigste der Ochratoxine.

OTA wird meistens schon während des Pflanzenwachstums gebildet, meistens jedoch während der Lagerung. Es kommt vor allem in Getreide, Hülsenfrüchten, Kaffee, Bier, Traubensaft, Rosinen und Wein, Kakaoprodukten, Nüssen und Gewürzen vor.

Ochratoxin A ist oft mit Citrinin und anderen Mykotoxinen vergesellschaftet.
