Fettuccine (von italienisch fettuccia = "kleiner Flor", kleines Band) sind eine Nudelart.

Beschaffenheit

Diese Pastaform kommt aus der Römischen Küche und ist eine dünne, breit gerollte Nudel bestehend aus Ei und Mehl, vorwiegend kommt ein Ei auf 100 Gramm Hellmehl. Die Form ist ähnlich der bolognesischen Tagliatelle. [1]. Sie haben eine Breite bis zu einem Zentimeter und sind je nach Herstellung in den Farben Gelb, Grün (Spinat), Orange und Schwarz (Tintenfisch) erhältlich[2].

Gerichte

Fettuccine werden oft mit einer Soße oder einem Ragout angerichtet. Fettuccine Alfredo, benannt nach dem Italiener Alfredo di Lelio aus Rom, das dieser 1914 erstmals kreierte, gilt als ein beliebtes Essen in Nordamerika.[3][4]
