Annatto (E 160b) ist die Bezeichnung für die als Gewürz verwendeten und rötlich-gelb färbenden Samen des Orleansstrauches (botanischer Name: Bixa orellana). Andere Namen sind Achote, Bixin, Orlean, Ruku, Anatto; die französische Bezeichnung ist roucou, die spanische achiote oder achote.

Die Pflanze kommt in der Karibik und im tropischen Südamerika vor. Ihre Samen sind klein, rot und dreieckig und weisen einen erdig-bitteren Geschmack auf. Sie fanden schon bei den Maya als Würz- und Färbemittel Verwendung, etwa als Textil- und Körperfarbe, daneben auch in religiösen Riten, wo sie mit dem Regen assoziiert wurden; selbst als Währung wurden sie benutzt.

In Europa ist Annatto weniger bekannt, wird aber unter anderem zur Färbung von Käse eingesetzt, wie etwa bei den französischen Sorten Mimolette, Fol Epi und Mamirolle, dem dänischen BlueNote, dem englischen Shropshire Blue, Cheddar und vereinzelt auch beim deutschen Gouda.

In Brasilien wird Annatto, je nach Region, Colorau, Urucum oder Colorífico genannt und viel zur Einfärbung und Würzung von Fleisch und Fischgerichten verwendet. In der mexikanischen Küche ist es unter der spanischen Bezeichnung achiote bekannt.

Die sehr harten Samen werden entweder mit heißem Wasser behandelt, um Inhaltsstoffe zu lösen, oder mehrmals fein gemahlen.

Chemische Komponenten

Annatto enthält Xanthophylle und sauerstoffhaltige Carotinoide. Es handelt sich um eine Mischung der Farbstoffe Bixin und Norbixin, wobei letzteres das Verseifungsprodukt von Bixin ist. Je nach Extraktionsverfahren aus der Pflanze überwiegt einer der beiden Stoffe. Wird zur Extraktion Natronlauge eingesetzt, entsteht auch das Natriumsalz des Norbixins. Annatto gilt als gesundheitlich unbedenklich.
