Slatko (serbisch) mit Wald-Erbeeren

Sladko, serbisch Slatko (von Bulgarischem/Serbischem für „Süßes“) bezeichnet eine Reihe von Konfitüre-Spezialitäten, die sowohl zur Balkanküche als auch zur jüdischen Küche gehören. Traditionell werden diese Konfitüren auf einem kleinen Glasteller zusammen mit einem Teelöffel und einem Glas Wasser serviert. Sladko unterscheidet sich von normalen europäischen Konfitüren dadurch, dass der Zucker zunächst allein zu einem Sirup gekocht wird, dem man anschließend die Früchte hinzufügt.

Für Sladko werden zum Teil auch Zutaten verwendet, die nach mitteleuropäischem Geschmack ungewöhnlich sind. So kennt die ostjüdische Küche Varianten, bei denen Rettich in Honig gekocht oder Konfitüre aus Karotten oder Rote Bete hergestellt wird.
