Palmitīn

Palmitīn (Tripalmitin, Palmitinsäuretriglycerid) (C16H31O)3C3H5O3 entsteht beim Erhitzen von Palmitinsäure mit Glyzerin, findet sich in den meisten Fetten neben Stearin und Olein, am reichlichsten im japanischen Bienenwachs und im Palmöl, aus dem es gewonnen wird, indem man durch Pressen das Olein entfernt, den Rückstand (zur Lösung des Stearins) mit Alkohol extrahiert und durch Umkristallisieren aus Äther reinigt. P. ist farb-, geruch- und geschmacklos, schuppig kristallinisch, sehr schwer löslich in Alkohol und in kaltem, leicht in heißem Äther, nicht in Wasser, schmilzt bei 63°, erstarrt wachsartig und wird durch Alkalien unter Bildung von palmitinsaurem Alkali und Glyzerin leicht verseift.
